Hubby finally agreed to let me make real chicken soup, but as usual, nah, not that usual I was missing an important ingredient so I improvised, yep I can do that! We had purchased a rotisserie chicken on his last feeling good day, Thursday.
That was after our look-see in Tuesday Morning's we had gone over to Winn Dixie's in the same Promenades Mall, and picked up dinner items. Believe it or not prime ribs, and two sides, Hubby's: mashed potatoes and gravy and corn, and mine roasted veggies and roasted red potatoes and the rotisserie chicken in lemon pepper. Oh a a few can goods too of stewed tomatoes, baked beans and also two packages of chopped meat, one of beer brats too, oh and two bags of frozen sliced mushrooms. Yep that was it. Good check for my memory being in tact.
Any-who, we both had the prime ribs that night with more than half was leftover and put away for next time. And the chicken was to be eaten some time over the weekend. But as luck would have it Hubby fell ill and lost his appetite. Fortunately, we had a gallon of Arizona sweet tea that we had bought for Number One Son, but he barely drank it, and Hubby doesn't usually, but it has been his mainstay for these last two days and hydration is important in any form. Although, today I steeped my own green tea with honey and added a lemon juice from a lemon from our tree and refilled the container after washing it thoroughly that is the Arizona tea container that was finished!
Oh my improvising was with the chicken soup I had no wide no-egg noodles that I usually use, and so I took the angel hair pasta and broke it in three places and it did a pretty display in the four packets of chicken no-sodium bouillon, since the chicken was already cooked. I did saute onions, garlic, celery, carrots in my roux again 50/50 olive oil and butter with a hefty quarter cup of flour for thickening.
Hubby refused my usual spices, although parsley was acceptable. He salt and peppered his to his taste. I on the other hand also added in mine rosemary, thyme, and sage, advisable, ha!
That was served at lunch and left on the fifth burner on our stove meant as a warmer, but it thickened so much I had to add more water and another bouillon packet, and this time some of those frozen mushrooms for our dinner. I almost forgot to tell you that I cut off breast meat from that rotisserie chicken too, and added that as I had chopped all my veggies in my mini food processor so I did the chicken too. For smooth soups I have a hand held emulsifier. hot
Hubby has been still running a fever with achy pains from his shoulders through his upper and lower legs. At his wanting something other than the Vicks Vapor Rub on chest and under his nose as well as in the vaporizer, and almost everything in the house raises his blood pressure we decided to try my allergy medicine, since it was prescribed when I used to be on blood pressure medication too.
Oh since 2010 I have not been able to drive, which makes it difficult for me, and I do feel so upset about not just running to the store to get him what he needs.
A few pharmacies do deliver, but so far we haven't tried them, and I did suggest it, but again he said no. I will have to get tough. Although even some of the previous medication that supposedly do not interfere with high blood pressure or the meds that you take for them they have been checked online to only find out that the indications of usage have changed, guess CYA, if you know what I mean, so what do you order, I know the pharmacist could help you decide and I might have to do that.
Anyway he said his one nostril is open now, yay! Small things, ha!
But before the last medication my over the counter allergy medication prescribed by my ENT, his blood pressure was up again, and higher than either of us like. Sometimes though just taking it so often can cause anxiety, and so we will wait a bit before we take it again, that "we" is him and me.
