On a cutting board take three boneless skinless chicken breasts and cut them length wise in half, making them thinner. Then spread them over the cutting board and cover with Saran/clear plastic wrap, all the way over and under the sides and then pound them with a mallet or can or rolling pin, etc. Next take four slices of bacon and cut into bite sized pieces. On a small plate take about a half cup of all purpose flour and add salt pepper and paprika and no sodium chicken bouillon to it. Get out your unsalted butter and more pepper, and with each flattened chicken breast put a good dose of raw bacon pieces and butter slice with pepper in the middle, then roll up each one up and then dredge in flour concoction, place in sprayed pressure cooker with quartered gold potatoes and water just up to the chicken. Cook on stove and when jiggler begins to jiggle set timer for thirty minutes till done.
Mixed veggie were done in the microwave, and so was the additional gravy fixings, mushrooms, garlic and onion with no sodium chicken bouillon, flour sprinkled, dash of extra virgin olive oil, and a bit of butter and water over the top, zap for one minute, after chicken is done add to pressure cooker pot for great gravy! Mixed frozen veggies also zapped in the microwave for two minutes in another separate micro safe container! And dinner is served!
*The more Kosher version of this recipe would be to leave the bacon out and instead of butter just use margarine and voila! Just as delicious! You may want to add a bit more Kosher salt and perhaps a bit more paprika.
